Would be grateful if somebody could explain this to me. Why is it on some markets like the total goals, there is still a huge amount of money on 1.01 on the lay side for the 1 goal or more even after a goal or two have been scored. How can you lay an outcome that has already happened, I am sure I am missing something?

These are people looking for free money. It costs them nothing to put it in there, and if someone matches them, mistakenly or otherwise, then they have made a risk-free profit.

There can be a legitimate reason for matching someone's Lay at 1.01 on, say, the 1+ Goals market after a goal has been scored: let's say you have backed 1+ Goals and a goal is scored. You have won your bet, but your funds will not be released until the market is settled, which will be after the game. You want to use the funds elsewhere, so the only way to free them up is to lay off at 1.01, which costs a fraction of what you won. You will then have your original funds back to invest elsewhere.
